Good quality, heavy copper sauce pans absorb and transfer heat well. These pans may be tall and narrow or wide and shallow in size ranging from 1 to 4 quarts (1to 4 liters).
Features
- Its proportions create a generous sauce-to-air ratio for very quick
evaporation. Exquisite copper exterior offers superior heat conductivity
and does not require frequent re-tinning.
- Copper sauce pans may be lined with tin for safe cooking. They may be
completely of copper or may be stainless steel-lined, or may have copper
bonded to the bottom.
- The handles of the saucepans may be made of stainless steel,
cast-iron or bronze for a lifetime of use.
- The pans are available in a two finishes:
- smooth polished finish
- hand hammered finish
